How do you deep dry (what temperature do you set it at)?

I'm making falafels, and I've never deep fryed before. What temperature do I set the stove at (high, med, low)? I looked at recipes and it only said it in degrees. I don't want to catch the oil on fire. :S

My deep fryer's instructions are frying at 365-375 degrees. I wouldn't recommend setting the temp much higher than that. Certainly no higher that 400 when you drop your meats or veggies.
